Back Story: Duff Goldman

Duff Goldman is no ordinary pastry chef. As the owner of Charm City Cakes in Baltimore and Charm City Cakes West in Los Angeles, he uses blowtorches and power drills to sculpt custom-made creations for clients. Preservation spoke with Goldman, the host of the Food Network’s Ace of Cakes and Duff Till Dawn, about his love of history and his architecture-inspired cakes.

Tell us about the first bakery you opened in Baltimore.

It’s in an old church that was built in the 1890s. But it’s been so many different things: a sewing factory, a wine bar, an art gallery. There was a small kitchen inside, and the first thing we did was expand it. The building needed quite a bit of work to get it back into shape, but it was totally worth it.

You majored in history, right?

Yes. I knew I wanted to be a chef, but I wasn’t thinking that far ahead. I thought I should take classes in subjects that in­terested me. The thing about history is that it’s fun stories—fun stories that really happened.

Duff has been cooking since the age of four, when his mom caught him in the kitchen swinging around a meat cleaver while watching Chef Tell on TV. It was no surprise when this young enthusiasm lead to a life devoted to culinary pursuits. After graduating from university he worked at several acclaimed culinary destinations including the French Laundry, the Vail Cascade Hotel and Todd English’s Olives before returning to Baltimore in 2000 to become a personal chef.

Duff then opened his own business called Charm City Cakes. What began as a small operation out of his own home with two assistants grew to include many employees, including many whose culinary backgrounds weren’t as pastry chefs. He hired experienced painters, architects, and sculptors as Charm City Cakes grew its reputation for the most imaginative, unusual creations.

Their creative use of tools like blow torches, grinders and drills never fail to fascinate the devoted audience of his hit show Ace of Cakes which aired for 10 seasons. Following Ace of Cakes, Duff has gone on to host and appear on a variety of show

When his dream of slaying on the guitar in a rock band wasn't paying the bills, Chef Duff Goldman turned to his talents as a classically trained pastry chef and metal craftsman and founded Charm City Cakes in Baltimore, MD, in 2002. Duff and his intrepid team of cake decorators churned out cakes the world had never seen before: cakes with sound, cakes with smoke, cakes with motorized moving components, life-sized baby elephant cakes—no cake was too crazy to tackle.

It wasn't long before Charm City Cakes caught the eye of the Food Network, where the hit reality cake decorating series Ace of Cakes was born. Our Baltimore bakery has had the pleasure of making our awesome clients' cake dreams come true for over two decades!

Our cakes have taken us everywhere, from Costa Rica to the 2008 Inauguration of President Obama, from Hollywood premieres to working with organizations like Share Our Strength that help fight hunger all over the world.
